Sweet Potato and Green Bean Pancakes with Applesauce Gravy
Serves: 6-8 cakes

Water, for boiling
1 large sweet potato, peeled and diced
1 c. fresh green beans, trimmed and halved
¼ c. self-rising flour
½ c. milk
1 egg
1 pinch salt, to taste
½ c. applesauce gravy, garnish
Bring enough water to cover potatoes to a boil and cook until tender about 20 minutes. Using back of fork mash potatoes until smooth then fold in beans, flour, egg and salt. Prep: 10 minutes

Scoop ¼ cup of batter onto preheated griddle and cook until bubbles form 3 to 4 minutes. Flip and cook another 2 to 3 minutes. Serve with applesauce as a gravy.
