I have been a good foodie this year by reamaining true to my passions about food and all that I can create with it. Just recently I was given the opportunity to become a freelance writer for Fair Oaks Patch (http://www.fairoakspatch.com/), a community based online newsletter, sharing with my neighborhood all about FOOD! Super exciting...my first article was posted this week!!!

Marx Foods: Soyrizo Double Potato Soup
I'm fortunate enough to have been given many opportunities to fulfill my passion and create new recipes with the help of Marx Foods gourmet food products. This soup is by far a favorite and definitely a keeper, thanks Marx Foods!
Soyrizo Double Potato Soup
Marx Foods Dried Guajillo Peppers
Serves: 4
Prep: 15 minutes
Cook: 45 minutes
Ingredients:
1 T. olive oil
12 oz. soyrizo
1 medium onion, chopped
4 carrots, peeled and sliced thin
6 c. chicken broth
2 cloves garlic, minced
1 Marx Foods dried guajillo pepper, reconstituted and minced
1 t. dried Mexican oregano
2 sweet potatoes, peeled and diced
2 Yukon gold potatoes, peeled and diced
3 Roma tomatoes, diced
2 T. cilantro, minced, plus 4 sprigs for garnish
1/4 c. sour cream
1 avocado, pitted and diced or sliced
1 Clementine orange, cut in 1/4
Heat oil over medium high in a large sauce pot and add soyrizo. Cook until lightly browned about 8 to 10 minutes. Using a slotted spoon scoop soyrizo into a bowl and set aside.
To same pot add onion and cook 3 to 5 minutes stirring often. Add carrots and cook another 5 minutes. Deglaze pot with broth scraping bottom of pan clean. Stir in garlic, dried oregano, Marx Foods guajillo pepper, potatoes and tomatoes. Bring to a boil, reduce heat to low and simmer about 20 to 25 minutes for potatoes to cook and flavors to meld.
Before serving stir in minced cilantro and browned soyrizo. Garnish each portion with 1 tablespoon of sour cream, 1/4 of an avocado, a squeeze of 1/4 of a Clementine across soup and top with a sprig of cilantro.

Marx Foods "A Chile & A Spoon" Blogger Recipe Challenge
Spicy Vegetable Pozole
Serves: 4-6
Prep: 10 minutes
Cook: 40 minutes
Ingredients:
1 Marx Foods De Arbol Chile
water, for soaking
2 T. vegetable oil
1 medium onion, chopped
3 cloves garlic, minced
4 carrots, peeled and sliced
2 stalks celery with leaves, sliced
3 c. chicken stock
1/2 c. water
1 t. cumin
1/2 t. chili powder
1 t. paprika
1 (29 oz.) can hominy
1 small head cabbage, cut in 1/4
1 c. cherry tomatoes, halved
1/4 c. cilantro, minced
1 lime, cut in 6 wedges
Directions:
To reconstitute de arbol chile bring enough water to a boil to cover and soak chile in a small bowl; let sit for 15 minutes. Drain, cut in half and remove seeds. Finely chop chile and set aside.
Heat oil over medium in a large pot and add onion. Season with salt and let cook 3 to 5 minutes until slightly yellow. Stir in garlic and cook another minute before adding carrots and celery. Season again with salt and cook until slightly tender stirring often, about 8 to 10 minutes.
Add broth, water, cumin, chili powder, paprika, de arbol chile, hominy and cabbage. Bring to boil, reduce heat to low, cover and let simmer for flavors to meld about 25 minutes. Stir in tomatoes the last 10 minutes of cooking.
Serve each portion garnished with cilantro and lime wedge.

Marx Foods Pasta and Truffles Recipe Contest
Black Truffle Grilled Chicken and Fennel Pollen Radiatore Tossed with Spinach, Cherry Tomatoes, Basil and Parmesan
Serves: 2-4
Prep: 10 minutes
Cook: 30 minutes
Ingredients:
1/4 t. Marx Foods Black Truffle salt
1/8 t. cracked pepper
2 boneless skinless chicken breasts
water, for boiling
8 oz. radiatore pasta
1/8 t. Marx Foods Fennel Pollen
4 c. fresh baby spinach leaves
2 c. cherry tomatoes, cut in half
2 T. olive oil
1 c. fresh basil, roughly chopped
1/2 c. freshly grated parmesan cheese, plus additional if desired
Directions:
Preheat oven to 350 degrees F. Evenly season both sides of chicken breasts with Marx Foods black truffle salt and cracked pepper then cook on a lightly greased cast-iron grill over medium high heat, about 5 to 6 minutes per side. Transfer to preheated oven and continue cooking until no longer pink, about 20 minutes.
In the meantime bring a large pot of salted water to a boil and add radiatore. Cook until almost tender, about 8 to 10 minutes. Drain and return to same pot.
Sprinkle pasta with Marx Foods fennel pollen and stir to coat evenly. Over medium low heat stir fresh spinach, tomatoes and olive oil into pasta and allow to slowly cook about 10 to 15 minutes. When pasta dish is almost ready toss in basil and parmesan; stir to blend.
To complete the dish chop black truffle chicken breasts and serve with pasta portions. Top with addition parmesan if desired.

Marx Foods Blogger Mushrooms Recipe Challenge
Apple Butter Sweet Potato Black Trumpet Mushroom Pizza with Sage and Black Truffle Oil Drizzle
Serves: 8
Prep: 20 minutes
Cook: 12-15 minutes
Ingredients:
1/2 oz. Marx Foods dried black trumpet mushrooms
water, for soaking
1 whole wheat pizza crust
1/2 c. apple butter
1/3 c. mashed sweet potato
2 c. shredded mozzarella cheese
2 T. fresh sage, minced
1 T. black truffle oil
Preheat oven to 400 degrees F. To prepare the dried mushrooms bring some water to a boil and pour over mushrooms; let soak about 20 minutes until soft. Drain and reserve mushroom stock for another dish.
Assemble pizza by placing crust on pizza pan then evenly smear apple butter and mashed sweet potato across crust almost to edges. Next sprinkle mozzarella over pizza then top with black trumpet mushrooms; bake for 12 to 15 minutes until golden and bubbly.
Remove pizza from oven and garnish with both fresh sage and black truffle oil. Let rest a few minutes for cheese to set then slice into about 8 even pieces and serve.

Marx Foods Blogger Mushroom Recipe Challenge
Roasted Large Herbed Turkey Meatballs and Spaghetti Tossed with Red Wine Marinara, Porcinis and Chanterelles
Serves: 4
Prep: 20 minutes
Cook: 40 minutes
Ingredients:
2 c. water
1/4 oz. Marx Foods dried porcini mushrooms
1/4 oz. Marx Foods dried chanterelle mushrooms
Meatball:
1 lb. ground turkey
1 t. salt
1/2 t. pepper
1/4 t. garlic powder
1/2 t. dried oregano
1 t. fresh sage, minced
1 T. fresh parsley, minced
1 T. capers, finely chopped
1/4 c. parmesan, freshly grated
Sauce:
1 T. olive oil
1 shallot, minced
2 cloves garlic, minced
1/2 c. dry red wine
26 oz. marinara sauce
1/3 c. reserved mushroom stock
1/2 lb. spaghetti
water, for boiling
1/4 c. parmesan cheese, freshly grated
12 small fresh basil leaves (garnish)
Directions:
Preheat oven to 400 degrees F. For the mushrooms bring 2 cups of water to a boil and pour over mushrooms that are placed in a microwavable safe bowl. Let sit for 20 minutes to rehydrate then drain reserving mushrooms stock and setting aside rehydrated mushrooms.
For the meatballs combine ingredients in a large bowl and using your hands mix until well incorporated. Break down the turkey into 12 large even meatballs and place onto a baking sheet lined with foil. Roast until browned about 30 minutes turning half way through cooking.
In the meantime heat oil over medium in a large pot and add shallot and garlic and cook a few minutes being careful not to burn garlic. Deglaze pot with red wine and let cook a couple minutes before stirring in marinara sauce along with reserved mushrooms stock. Bring to a boil, reduce heat to low and simmer about 35 to 40 minutes. While sauce and meatballs are simmering bring a large pot of salted water to a boil and add the spaghetti.
Cook until tender about 8 to 10 minutes.
To plate dish place spaghetti onto center of plate, next spoon sauce across top, place three meatballs onto each plate then grate 1 tablespoon of parmesan onto each serving. Garnish each plate with a few small fresh basil leaves.

Marx Foods Blogger Mushroom Recipe Challenge
Pan Roasted Chicken and Creamy Pesto Linguini Tossed with Porcinis, Chanterelles, Cherry Tomatoes and Patty Pan Squash
Now when you're wanting to impress or perhaps even put together an "I'm sorry meal" for that special someone this is the one to go to, or at least for my boyfriend anyway, and he is one who knows his foods and has a specific palate.
I am grateful for having the opportunity to create this delicious dish using dried mushrooms from Marx Foods to participate in their Blogger Mushroom Recipe Challenge, thanks Justin!
Serves: 4
Prep: 20 minutes
Cook: 30 minutes
Ingredients:
2 c. water
1/4 oz. Marx Foods dried porcini mushrooms
1/4 oz. Marx Foods dried chanterelle mushrooms
2 T. olive oil
4 boneless skinless chicken breasts
salt and pepper, to taste
1 1/2 c. alfredo sauce
1/4 c. pesto
1/3 c. reserved dried mushroom stock
1 c. cherry tomatoes, halved
1 medium patty pan, seeded and diced
1/2 lb. linguini
water, for boiling
1/4 c. freshly grated parmesan(garnish)
Directions:
To prepare dried mushrooms bring 2 cups of water to a boil and pour over mushrooms placed in a non-reactive bowl. Let sit for 20 minutes then drain reserving mushroom stock. Cut most pieces so they resemble the same size leaving some mushrooms whole and set aside.
For the chicken preheat oven to 350 and season both sides with salt and pepper. In a large skillet heat oil over medium high and add chicken top side down. Cook until golden about 5-6 minutes per side. Transfer chicken to oven and continue to cook until no longer pink in the center about 20 minutes.
In the meantime combine, alfredo, pesto, 1/3 cup reserved mushroom stock, mushrooms, tomatoes and patty pan in a medium sauce pan. Bring to a boil, reduce heat to low and simmer until chicken is done.
While sauce is simmering bring a large pot of salted water to a boil and add linguini. Cook until tender about 10 minutes. Drain, return to pan and add sauce to pasta. Toss to coat evenly. To plate dish spoon pasta onto center of plates and place chicken breasts on top. Garnish each plate with 1 tablespoon of freshly grated parmesan cheese. Enjoy!

National Food Month
It's a new month and we're celebrating biscuits, breakfast, chicken, honey, mushrooms, organic harvest, papaya, potatoes and rice. Also the first week celebrate waffles, the second week celebrate biscuits with gravy and vegetarian awareness week...that's ironic! Finally the fourth week finish the month by celebrating wild rice. This is too the beginning of wine and oyster seasons!

National Food Day
Happy National Bratwurst Day! We will be grilling up traditional Brats and placing them into whole wheat hot dog buns then slathering with mayo, spicy mustard, sourkraut and my girl Tami's home-made pickles!
